The stuffing is universal for most south Indian foods, you can make sandwiches with it or make spicy boli with it, today we will make “Stuffed Bread Pakoras”.




This is an evening snack made the North-Indian way. The same stuffing is used in our Aloo bondas, this bread pakora is crunchy and is best enjoyed hot.

Ingredients
  • 3 potatoes (boiled & mashed)
  • 1/4 tsp mustard seeds
  • 1/4 tsp cumin seeds
  • 1/8 tsp turmeric powder
  • 1/2 green chili (chopped)
  • 1/2 tsp ginger garlic paste
  • Salt
  • 1 cup besan flour
  • 1/2 tsp chili powder
  • 1/4 tsp turmeric powder
  • water
  • 4 bread slices
  • tomato sauce
  • mustard sauce
  • oil for frying
Instructions
  1. To a pan in medium heat add 2 tbsp oil, then add the mustard & cumin seeds, let them pop.
  2. Now add the turmeric, green chili & ginger garlic paste and saute for 30 seconds.
  3. Now add the mashed potatoes and give everything a good mix.
  4. Reduce the flame to low and add salt to taste, again mix everything well, make sure you get a smooth mixture & Remove it from the pan.
  5. Add the besan flour to a bowl & add chili, turmeric powder & salt.
  6. Add water little by little and whisk till you get a smooth batter, please watch the video above for the consistency of the batter.
  7. Now, take 2 bread slices and spread tomato sauce on one & mustard on the other slice.
  8. Add the stuffing to one slice, fill the stuffing generously and place the other slice of bread with the sauce side face down on top.
  9. Flatten the bread a little & remove any extra stuffing from the sides, then cut the bread in half.
  10. Now using tongs or hands gently dip the bread in the besan mixture and coat it well on both sides, now its time to fry.
  11. Fry in medium heat for 5-7 minutes till the outer layer turns brown.
  12. Serve it with tomato sauce or green chutney.
