Filter coffee is the most south Indian of things, hard to believe it didnt originate in India, nevertheless we south Indians love it. No other type of coffee does the trick if you are used to pure filter coffee, but beware it will quickly become an addiction and do not consume after 6 in the evening or you will be awake for most part of the night.

People who love filter coffee will not accept an instant coffee or machine made coffee as a replacement, because the filter coffee has a beautiful aroma that will fill your kitchen and it is the purest form of coffee.




I myself like it 85% coffee with 15% chicory added. The chicory gives thickness to the decoction. If you have never tried filter coffee, then this method is a absolutely must for you. Follow these steps to make the proper south Indian filter coffee. This recipe will make filter coffee for 2 people.

Ingredients
  • 3 tbsp Coffee powder
  • Sugar
  • Milk
Instructions
  1. Clean the filter pores with hot water and make sure all the water has drained.
  2. Now add 1 tsp of sugar into the filter.
  3. Then add 3 tbsp of coffee powder and tamper in on top using a spoon to flatten the powder.
  4. Now add boiling hot water, the same amount of water as the coffee powder.
  5. Wait for 5 minutes and your decoction will be ready.
  6. Now boil the milk & in a coffee tumbler add sugar to your taste and then fill half of the tumbler with milk.
  7. Now add the decoction till the coffee turns to your favorite dark, but remember more dark coffee will be bitter.
  8. Using the saucer, mix everything well so that foam forms on the top.
  9. Make sure not to mix it multiple times as it will cool the coffee, pure filter coffee needs to be enjoyed hot.
