Let’s Make a Simple Egg Curry. It goes well with boiled rice or chapathis and its very easy to make. Make sure you hard boil the eggs for atleast 12 minutes or the yolk will be soft and mix with the rest of the curry.

Ingredients
  • 1 tbsp oil
  • 1/2 tsp garam masala
  • 1 tsp black mustard seeds
  • 1 tsp fennel seeds
  • 1/2 tsp urad dal
  • 2 medium onions chopped
  • 2 tsp ginger and garlic paste
  • 1 tsp turmeric powder
  • 2 medium tomatoes chopped
  • 1 tbsp coriander powder
  • 1 tbsp red chilli powder
  • salt to taste
  • 11/2 cups water
  • 3 boiled eggs
  • chopped coriander leaves for garnishing
Instructions
  1. Heat a pan and add oil.

  2. When the oil gets hot add garam masala and black mustard seeds.

  3. Black mustard seeds will start to crackle. Now add fennel seeds and urad dal.

  4. Cook for few seconds or till urad dal starts to turn brown.

  5. Now add chopped onions, ginger and garlic paste and turmeric powder and cook till onions turn translucent.

  6. Add tomatoes, coriander powder, red chilli powder and salt and cook till the tomatoes are well cooked.

  7. Add water and bring it to boil.

  8. When the curry starts to thicken slowly add boiled eggs.

  9. Mix well so that the curry gets well coated on the eggs.

  10. Let the curry cook for further one minute.

  11. Now turn off the stove and add chopped coriander leaves.

  12. Egg curry is ready to be served.
