What differentiates south Indian chicken masala to north Indian chicken masala, well the whole spices ofcourse. This is a chicken masala which is spicy, flavorful and makes a special meal when paired with rice or chapathis. Traditionally chicken with bone make the best chicken masala better than boneless chicken.




Now this recipe is so mouth watering that after I made it I was not able to wait few minutes to take the photo, an absoutely amazing dish loved by anyone who enjoys chicken.

Ingredients
  • 1/2 kg chicken
  • 1 bay leaf
  • 1 inch cinnamon
  • 3 cloves
  • 1 tsp fennel seeds
  • 1 elachi broken
  • 1 tsp garam masala
  • 5 curry leaves
  • 2 green chilies sliced
  • 1 cup chopped onion
  • 1 cup chopped tomato
  • 11/2 tsp ginger garlic paste
  • 1/2 tsp turmeric
  • 1/2 cup yogurt
  • 1 tbsp chili powder
  • 1 tbsp coriander powder
  • 2 tbsp cashew paste
  • salt to taste
Instructions
  1. Add some oil to a pan and saute the masala items - bay leaf, cinnamon, cloves, fennel & elachi.
  2. Now add garam masala, curry leaves and green chilies and cook for a minute.
  3. Add the onion and cook till they become translucent, then add the ginger garlic paste and give it a good mix.
  4. Now add the chicken and turmeric and mix it well, then add the yogurt and mix.
  5. Add the chili powder and coriander powder and cook for a few minutes.
  6. Now add the tomatoes, salt and cook till all the tomatoes are smashed making a nice masala.
  7. Finally add the cashew paste and mix well and cook for a minute, now your chicken masala is ready to be served. It is best enjoyed with a side of rice.
