You have a few carrots lying around & some milk and sugar, you are good to make one of the best desserts India has to offer. What makes this dessert taste so good is that the milk is given enough time to evaporate which cooks the carrot in turn to a consistency of a pudding.

Carrot halwa is traditionally made using finely grated carrot but today I have chosen a nice wide grated carrot because I personally like the texture. Also ghee or butter can be used to initially fry the carrots, I have used clarified unsalted butter. If you buy the carrot halwa at a sweet shop, they probably would have added the nuts during the cooking time, this makes them a bit oily and they are not crunchy, so I chose to add them at the end.




One of the best combinations of desserts I have had is carrot halwa with vanilla ice cream on top, try it. Optional Ingredients include paneer(cottage cheese), elachi powder, roasted nuts for garnishing.

Ingredients
  • 2 tbsp ghee or clarified butter
  • 2 cups carrots (grated)
  • 1 cup milk
  • 3/4 cup sugar
  • 1/2 cup paneer
  • a pinch of elachi powder
  • 1 tbsp roasted nuts
Instructions
  1. Add the ghee or clarified butter to the pan in medium heat, add the carrots and cook them for 30 seconds so as to coat all the carrot with ghee.
  2. Now add the milk and continue cooking in a medium flame for about 20 mins(till all the milk evaporates)
  3. Once the milk has evoparted add the sugar and continue cooking for 5 mins till you see the ghee oozing out
  4. Now add the paneer and cook for a couple of minutes, finally add the nuts, elachi powder and give it a quick mix and serve.
