I have never been to france and dont know whether they call french fries just fries there, for me I was introduced to french fries first time I went to a mcdonalds, those are still the best fries I have tasted.
I saw there french fries making process online and was blown away by how much work that goes into to make them the exact size and texture.

If you are like me you dont care about exact size of the fry, just the taste. So I decided to make my own version of the fries with an Indian twist.




Corn flour is used to bind the spices to the fries and it gives a crispy outer texture. Make sure after you prepare the potatoes, you freeze them for atleast an hour, otherwise the spices seperate in the bowl when there is too much moisture. Also do not overcrowd the oil.

Tip: After preparing the potatoes, take the desired quantity for each serving and put them in a ziplock bag to freeze them seperately, this way the spices stick better and you dont thaw the unused potatoes. You can store them for atleast a couple of weeks in the freezer.

Ingredients
  • 4 pototes
  • 1 tsp chilli powder
  • 1/2 tsp garam masala
  • 1/4 tsp turmeric powder
  • 1/2 tsp salt
  • 3 tbsp corn flour
Instructions
  1. Peel the potatoes outer layer, wash them and pat them dry. Cut into desired french fries size.
  2. Add all the other ingredients and 1-2 tbsp of water and give it a good mix.
  3. The spices should be coated well.
  4. Now freeze it for about an hour, take them out and fry them in hot oil.
  5. The oil needs to be in high heat as you add the frozen fries the temperature comes down a bit, reduce the heat after you have added the required quantity of potatoes.
  6. Do not let the rest of the potatoes thaw outside, put the unsused ones in a freezer immediately.
  7. Fry the potatoes till they turn golden brown.
  8. Once fried, sprinkle some salt and chat masala on top and give it a good mix, your spicy fries are ready to serve.
  9. Enjoy it with tomato sauce.
