The stuffing is universal for most south Indian foods, you can make sandwiches with it or make spicy boli with it, today we will make “Masala Bonda” also known as aloo bonda.

This is an evening snack made the south-Indian way. if you want the bondas to puff up, add 1/4 tsp baking soda when you prepare the batter, I just prefer it this way.

Ingredients
  • 3 potatoes (boiled & mashed)
  • 1/4 tsp mustard seeds
  • 1/4 tsp cumin seeds
  • 1/8 tsp turmeric powder
  • 1/2 green chili (chopped)
  • 1/2 tsp ginger garlic paste
  • Salt
  • 1 cup besan flour
  • 1/2 tsp chili powder
  • 1/4 tsp turmeric powder
  • water
  • oil for frying
Instructions
  1. To a pan in medium heat add 2 tbsp oil, then add the mustard & cumin seeds, let them pop.
  2. Now add the turmeric, green chili & ginger garlic paste and saute for 30 seconds.
  3. Now add the mashed potatoes and give everything a good mix.
  4. Reduce the flame to low and add salt to taste, again mix everything well, make sure you get a smooth mixture & Remove it from the pan.
  5. Add the besan flour to a bowl & add chili, turmeric powder & salt.
  6. Add water little by little and whisk till you get a smooth batter, please watch the video above for the consistency of the batter.
  7. Now, make balls from the earlier prepared potato mixture and dip them in batter using a spoon, make sure to coat the batter on the whole surface.
  8. Now, Fry the balls in medium to high heat, let it cook for 5-7 minutes, move them in the oil a litte to make sure they are properly cooked on all sides.
  9. Remove and serve with tomato sauce.
