While browsing through the net, I found an article that said kfc secret recipe has been finally revealed, to my surprise there were no 11 secret herbs & spices but only 3 – salt, pepper & paprika. The article said that since people were allergic to various herbs, kfc is reportedly using only these 3 spices. I am not sure what to believe, so I decided to check it for myself.




The most amazing part of the kfc original recipe chicken is the outer layer, which unlike most fried chicken recipes is not crispy, this is achieved by using only plain flour and egg whites instead of most recipes that use a plain flour and corn flour mixture with eggs. The second most amazing part was the juicy inside, this is actually achieved in kfc by using a pressurized cooking unit to seal the moisture in, since we cannot do that at home, I decided to marinate the chicken in buttermilk and spice mixture for an hour and fry it.

The results of the recipe are amazing, although you wont get the same kfc taste, I would say this is the closest recipe in terms of texture, juicy meat inside and a taste little similar to the original recipe.

Ingredients
  • For marination
  • 250 gms chicken
  • 1/2 tsp salt
  • 2 tsp ginger garlic paste
  • 1 tsp pepper
  • 1 tsp chili powder
  • 1 cup buttermilk
  • For the flour mixture
  • 1 cup plain flour
  • 1 tbsp chili powder
  • 1 tbsp pepper
  • salt to taste
  • For the Egg mixture
  • 2 egg whites
  • 1 tbsp milk
Instructions
  1. Marinate the chicken for 1 hr by mixing all the marinating ingredients.
  2. Mix all the ingredients of the flour mixture to form the flour mixture and do same with the egg mixture, prepare them in separate bowls.
  3. Take a medium pan and heat oil for frying.
  4. The oil should be medium to medium - high in temperature.
  5. Now, remove a piece from the marination, roll it in the flour, dip it in the egg mixture, roll it in the flour again, fry it for 5 - 7 minutes.
  6. Make sure you use different hands for rolling in flour and egg mixture as it may get sticky, also shake the pieces after rolling to remove the excess flour and to drip the excess egg wash.
